Mac and Cheese Spoon
Ingredients:
Macaroni noodles 1 Lb.
White wine 1 C.
Chicken stock 1 C.
Garlic powder 2 Tsp.
Onion powder 1 Tsp.
Half and half 1 C.
Shredded Velveeta 1 1/2 Lb.
Shredded swiss cheese 1/2 Lb.
Shredded cheddar cheese 1/2 Lb.
Panko breadcrumbs (toasted) 2 C.
Directions:
Fill a large saucepot 3/4 of the way full with cold water. Pour 1/2 cup salt in water and bring to a boil. Once boiling, pour in noodles and cook. Strain the noodles, toss with a little extra virgin olive oil and set aside in a larger mixing bowl.
Place a large stainless steel bowl on top of a large pot of boiling water to create a double boiler. In the bowl, add all ingredients except the half and half and breadcrumbs. Whisk ingredients together until smooth. Add the half and half to achieve the consistency desired. Add the macaroni to the cheese mixture and reduce heat on the double boiler. Fold the macaroni and cheese together using a rubber spatula making sure to scrape down the sides of the bowl so the cheese does not burn. Once combined, mix in half of the toasted breadcrumbs.
Fill spoons with desired amount of macaroni and cheese. Top with toasted breadcrumbs and lay out for serving.
