INGREDIENTS
1-1/2 cup cooked lean ham or Canadian bacon, cubed
4 oz. 2% shredded cheddar cheese
1/4 cup diced onion
1/2 cup reduced fat Bisquick baking mix
1/8 tsp pepper
1/2 cup Egg Beaters
1 cup skim milk
DIRECTIONS
Preheat oven to 400. Spray 9” pie plate. Sprinkle ham, cheese and onions in pie plate.
Stir Bisquick, milk, pepper & egg beater, until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean.
Cool 5 minutes before serving.
WEIGHT WATCHERS DEVILED EGGS WITH ROASTED RED PEPPERS

INGREDIENTS
4 large egg(s)
2 Tbsp fat-free mayonnaise
1 oz roasted red peppers, about one piece, minced
1 tsp Dijon mustard
1/8 tsp hot pepper sauce
1 Tbsp chives, or parsley, freshly minced
DIRECTIONS
Place eggs in a single layer in a medium saucepan. Pour enough cool water over eggs to cover them by 1 inch. Set pan over high heat and bring to a boil. Reduce heat to medium and simmer 12 minutes. Remove eggs with a slotted spoon and plunge into ice water (to prevent further cooking).
Shell eggs. Slice in half lengthwise and carefully remove yolks. Transfer yolks to a medium bowl and add mayonnaise, peppers, mustard and hot sauce. Mix until smooth and creamy.
Spoon yolk filling into egg whites, mounding it slightly. Sprinkle with chives or parsley just before serving. Yields 2 halves per serving.

INGREDIENTS
6 whole hard-boiled egg(s)
2 medium scallion(s), finely chopped
1 tsp canned green chili peppers, drained, chopped
1 Tbsp cilantro, fresh, minced
1/2 small sweet red pepper(s), finely chopped
1/4 cup fat-free mayonnaise
1 Tbsp salsa
1/4 tsp ground cumin
1/8 tsp black pepper
1/4 tsp table salt
DIRECTIONS
Peel eggs. Mash with a fork in a large bowl. Add remaining ingredients and mix thoroughly to coat.
Serve egg salad on light bread (add 1 pt/serving), in a cored bell pepper, over mixed greens or on its own in a bowl. Yields about 1/2 cup per serving

INGREDIENTS
2 cups of egg substitute (like Eggbeaters or Scramblers brands)
2 cups skim milk
2 slices of light bread, cubed
1 tsp dried mustard
1 bag of Morningstar Farms SAUSAGE crumbles (12 oz)
1 cup grated 2% cheddar cheese
DIRECTIONS
Combine all ingredients in a large bowl.
Spray 9X13 baking pan with non-stick spray. Pour mixture into pan. Refrigerate overnight.
Bake @ 350 degrees for 45 minutes.
